Start by heating about a tablespoon of olive oil over a large skillet on medium-high heat. Once the oil is heated, add two cloves of chopped garlic and cook until browned before mixing in a pint of cut tomatoes, a pinch of parsley, two tablespoons of capers, and a half cup of orange juice. Let cook for about five minutes before adding a tablespoon of olive oil to a separate skillet.

Next, lightly season each halibut fillet with salt and pepper before adding to the skillet. You should cook the fish for about three to five minutes, or until the fish turns an opaque color.
